Description

The aroma and taste of this mushroom is unmistakably that of maple syrup. “You are what you eat.” When you eat garlic, the next day you stick of garlic. When you eat candy caps the next day you smell sweet like that of maple syrup. These mushrooms are small, red-brown, and delicate. The maple syrup or curry fragrance becoming more intense when dried. They are found in many habitats, usually late in the mushroom season.

Cooking Ideas

Dried candy caps are primarily used for their sweetness in savory or dessert applications. Add to savory meat dishes or incorporate into a sweet sauce. Use dried candy cap powder as a dust or blend with sea salt to make a flavored salt. Pair candy caps with caramel, soft cheeses, root vegetables, apples and potatoes.

  • Mushrooms are one of the few natural sources of vitamin D, which is extremely important for the preservation of bones and teeth.
  • 3,5 oz of mushrooms provide you with one-third of the recommended daily dose of vitamin B1, and to a large extent it includes riboflavin (the lack of which can lead to skin diseases), niacin (guardian of your nervous system) and folic acid (responsible for good digestion).

Directions on how to Rehydrate

To rehydrate or reconstitute dried mushrooms, place desired amount into a bowl covered with warm water and let dried mushrooms soak for 30 minutes. After the 30 minutes have gone by, gently lift the mushrooms out of the water using a strainer. The mushrooms should be clean, plumped and ready to use.

How to Store

It is very important that dried mushrooms are stored properly to insure long term and maximum freshness. Place the mushrooms into either a plastic or glass container with a tight fitting lid. Our first recommendation, though, is freezing or storing in a refrigerator or freezer. Place the dried mushrooms in a clean, tight sealing freezer bag. The reason for maximum cold storage is because heat and moisture are the greatest enemies. The mushrooms should keep well for six months to a year.
